Janjgir Champa: – Arsa or Anarsa has been made for years on festivals all over North India. Some women are so skilled in making it that even confectioners give up. The method of making this traditional sweet and its name are slightly different in different places. In Chhattisgarh, it is also called Aairsa. The time taken in its preparation is a little more. But the taste is also unmatched.

There is a lot of demand for Aairsa during the traditional festivals of Chhattisgarh and Ganesh Chaturthi festival. It is made in every household here. It is a delicious sweet dish made from jaggery. Aairsa is one of the famous sweets of Chhattisgarh. To make it, rice is soaked in water a day before. Then that rice is dried and ground. After that jaggery is added and this flour is cooked on low flame. Aairsa is very soft to eat. So let’s know the method of making Chhattisgarhi Aairsa.

  • • To make Aarsa roti, first wash the rice twice with water at night. After that soak it in water and keep it overnight.

    • After that, next morning separate the water completely from the rice and dry the rice for some time.

    • After that grind the rice with the help of a mixer, and when all the rice is ground well then press it with your hands and keep it aside.

    • Now turn on the gas and heat water and jaggery together in the panel (pan) and prepare thick syrup. Now add rice flour little by little into that thick syrup and keep mixing it with the help of a spoon.

    • Now heat oil in a pan and make round balls of rice flour mixed with jaggery paste and flatten them and put them in the oil.

    • When it is cooked well from one side, then turn it over and cook till it becomes light red. After that, take it out from the pan with the help of a sieve.

  • Now your Chhattisgarhi dish Aairsa made from jaggery is ready. The best thing is that it is very soft. Due to which the elders like it more. Aairsa is one of the famous dishes of Chhattisgarh.
